Why Fresh Milled Flour

Every loaf starts as a whole wheat berry, milled fresh on our Mockmill the same day we bake. No rushing the rise, and no shortcuts on the grain, either.

Complete Whole-Grain Nutrition

When we mill wheat berries fresh, we keep the entire kernel (bran, germ, and endosperm) intact. Commercial all-purpose flour strips away the bran and germ during industrial roller milling, along with most of the fiber, healthy oils, and micronutrients that come with them. Fresh-milled flour keeps all of that, which is a big part of why it tastes and behaves differently in a loaf of bread.

Vitamin E and Your Skin

Vitamin E is a fat-soluble antioxidant, and it's one of the nutrients most concentrated in the wheat germ, the part of the kernel that conventional milling removes first. As an antioxidant, vitamin E helps protect skin cells from oxidative stress caused by everyday environmental exposure, and it plays a role in skin's natural moisture and repair processes. It's one more reason we like keeping the whole kernel in the mix: fresh-milled flour is one of the more accessible everyday ways to get vitamin E from real food, rather than a supplement.

Why "Enriched Flour" Exists

If you've ever wondered why store-bought flour is labeled "enriched," it's because of what milling takes away in the first place. When roller milling strips out the bran and germ, it removes most of the fiber, iron, and B vitamins along with them. In the early 1940s, with nutritional deficiencies like pellagra and beriberi showing up in the general population, the U.S. government worked with millers to standardize adding synthetic iron, niacin, thiamine, riboflavin, and folic acid back into white flour and by 1943, enrichment was effectively required nationwide. That's the "enriched" on the bag: nutrients added back in after the fact, rather than left in the flour to begin with.
